MANIFESTO

In matters of taste
humans are controlled by their sensory perceptions. Things that taste good and smell good are quickly connected with positive memories.

Not long ago
wine was a precious and costly beverage that only the rich and privileged could afford. In turn their lives and lifestyles have influenced the style, taste, language and form of wine.

The democratization

of wine has led to more people than ever being able to take part in the enjoyment and celebration of wine. The process of social change has made it possible for wine to reach all people, even those who, just a few decades ago, could never have imagined such luxury being so accessible.

The opening
of international markets has added to the popularization of wine, as well as developments in packaging and transport technology. Aside from price, these were the key factors which had limited the spread of wine as merchandise.

Nonetheless
there are always distinctions between wines. These differences are influenced by factors which the creative will of humans cannot naturally or forcibly control or effect.

These include
climate, soil-type, microclimate, grape biorhythm, transferal of energy, and time. These are the constants, the major factors determining the flavor and aroma sensations a wine will impart. They are the basic elements; they cannot be manipulated.

Those elements
which cannot be manipulated but are inherent to the creation of wine reveal the legend of this elixir. This is the unfathomable which has fascinated humans since the beginning of time, whenever a wine was close enough to whisper to their senses.

The earth
its complexity and depth, hold the key to the true enjoyment of a wine.

Wine
can only come into being when special circumstances prevail. These circumstances do not begin at any set moment, like the strike of a clock, nor do they end abruptly, like a clash of cymbals. They are pockets of space and time which gently cross over from one into the next, where the dynamics of growth can unfold, just as human creativity and craftsmanship.

Curiosity
is a natural virtue of humankind and its most important driving force. It is fundamental to the discovery of new things. Like new taste.

Nature
is in perpetual motion, which means our work in the vineyards and with our vines is also a perpetually changing process, differing from year to year according to what the conditions demand.

Wine
is a living image of the vintage‘s dynamics, stored in the wine as tastable, tangible information.

We at the Corvers-Kauter estate
use all our expertise to guide the Riesling grape’s development, enabling it to unfold to its fullest and truest form. The inner energy and vibrations of each vineyard are passed on to the flavor of the wine. Riesling is a very special grape. We see it as a kind of detector or medium that picks up the hidden parts and pushes them to the surface. Riesling cannot do that just anywhere, only where it feels most at home.

We maximize
all the impressions from this vast, exciting and vibrant world of Riesling into one singular wine.

This is the principle of R3.

MAKING OF

R3 represents one of the best Riesling winegrowing regions in the world – the Rheingau. It reflects the geological structure of the area as well as the microclimate of our best vineyards in the towns of Oestrich, Winkel and Rüdesheim.
The artistry of R3 starts - as would be expected - in the vineyards. Factors such as soil composition, vineyard exposure to sunlight, the biorhythm of the vines, and the transfer of energy during a vegetation period of up to 150 days, all combine to determine the composition of R3. These parameters are the defining reference values for our decision-making. Every job we perform, from pruning to blossoming, foliage management to thinning, and on up to the harvest in the late fall, is viewed in terms of sustainability. Because we know it is only if we work together with Mother Nature that we can harvest the supreme quality of grape we have defined for creating R3.
